At Sushi ii, we are proud to feature three expressions from this iconic house: The Yamazaki Single Malt, Yamazaki Distiller’s Reserve Single Malt, and Hibiki Harmony—each offering a distinct window into the art of Japanese whisky.

Suntory: The Founding House of Japanese Whisky
Founded in 1923 by Shinjiro Torii, Suntory established Japan’s first malt whisky distillery: Yamazaki, located just outside Kyoto. Inspired by the elegance and complexity of Scotch whisky but deeply rooted in Japanese sensibilities, Suntory sought to create a spirit uniquely reflective of Japan’s climate, water, and reverence for nature. The result was a softer, more refined whisky—delicate in structure, layered in flavor, and meticulously crafted.

Today, Suntory remains at the forefront of Japanese whisky, with its spirits consistently earning international acclaim for their subtlety, harmony, and depth. At Sushi ii, we showcase three remarkable bottles that reflect Suntory’s range and refined artistry.

The Yamazaki Single Malt

Hailed as the soul of Japanese whisky, Yamazaki Single Malt is produced at Japan’s first and oldest malt distillery. The distillery's location—at the confluence of three rivers in a region known for its exceptionally pure and soft water—is key to the whisky’s finesse.

This single malt offers rich aromas of spiced wood and dried fruit, followed by notes of honey, clove, and toasted almond on the palate. With a long, elegant finish, Yamazaki pairs beautifully with dishes that highlight umami.

Yamazaki Distiller’s Reserve Single Malt

Crafted to express the signature character of the Yamazaki house, the Distiller’s Reserve is a more youthful, vibrant take on the traditional single malt. It showcases the influence of mizunara (Japanese oak) casks, adding a layer of sandalwood and incense to its fruity, floral base.

Bright notes of strawberry, peach, and gentle spice give this whisky a lighter profile, making it a perfect match for to enjoy at the start of the meal or during a nigiri course. Its balance and approachability also make it an excellent introduction to Japanese whisky.

Hibiki Harmony, Suntory

A masterful blend of malt and grain whiskies from the Yamazaki, Hakushu, and Chita distilleries, Hibiki Harmony is a study in balance and integration. True to its name, every element in this whisky is meticulously layered to create a seamless drinking experience.

With aromas of rose, lychee, and rosemary, and flavors of honey, orange peel, and white chocolate, Hibiki Harmony offers a soft, complex profile that lingers with gentle sweetness and spice. It’s a contemplative pour, ideal for sipping slowly throughout the Omakase experience
