Mars Distillery: Elevation, Climate, and Craft in Japanese Whisky
Among Japan’s most intriguing whisky producers is one that operates not from the rolling hills of Kyoto or the forests of Yamazaki—but from the mountainous regions of Nagano and the coastal warmth of Kagoshima. Mars Distillery, under the Hombo Shuzo umbrella, has been quietly pushing the boundaries of Japanese whisky with a unique approach: crafting spirits in two vastly different climates. At Sushi ii, we are proud to offer two extraordinary expressions from this pioneering distillery: Komagatake Single Malt 2021 Edition and Tsunuki Single Malt.
A Tale of Two Distilleries: Mars Shinshu & Mars Tsunuki
Mars operates two distilleries that define its distinctive approach:
Mars Shinshu, located 798 meters (2,600 feet) above sea level in the mountainous Nagano Prefecture, is the highest whisky distillery in Japan. With its crisp air, heavy snowfall, and soft granite-filtered water, Shinshu lends itself to long, slow maturation and delicate, nuanced flavor profiles.
Mars Tsunuki, by contrast, is situated in southern Kagoshima, on the island of Kyushu. This region is known for its warm, humid climate and proximity to the sea—factors that lead to faster aging and bolder, richer characteristics.
By embracing these two extremes, Mars creates whiskies that offer a unique sense of place, showcasing the diversity of Japan’s landscapes and how environment can shape expression.
Komagatake Single Malt 2021 Edition, Mars Distillery
Named after Mt. Komagatake, which towers near the Shinshu Distillery, this limited-edition single malt is a celebration of elevation and restraint. The 2021 edition was aged in a variety of casks—including American white oak and sherry barrels—resulting in a balanced and elegant whisky.
Expect aromas of ripe pear, orange peel, and toffee, followed by notes of vanilla, subtle smoke, and gentle spice on the palate. It’s a whisky that reflects the cool, clean air of its alpine origin—subtle, layered, and impeccably smooth.
Tsunuki Single Malt, Mars Distillery
Produced in the warmth of southern Japan, Tsunuki Single Malt offers a bolder, more expressive profile. Aged primarily in bourbon casks, this whisky is round and full-bodied, with aromas of baked apple, honey, and toasted oak, and a palate layered with caramel, banana, and a touch of smoke. Its strength and warmth also make it ideal for sipping with just a single clear cube of Kuramoto ice, allowing its complexity to unfold slowly.
Mars at Sushi ii: A Journey Through Terroir
By showcasing both Komagatake and Tsunuki, Sushi ii offers guests a rare opportunity to taste how regionality—something often discussed with wine—translates into the world of Japanese whisky. These expressions highlight Mars’s innovative approach to aging and the deep respect it holds for both environment and process.
Mars Distillery may be lesser known than giants like Suntory or Nikka, but its whiskies reflect some of the most exciting innovation happening in Japanese spirits today. At Sushi ii, we are honored to share these two expressions—each a portrait of place, season, and craft.
